DescriptionSymons notes on the cheese: Making the Mount Shadwell cheese is an exacting process which involves the milk being heated to 32 degrees celsius and a combination of starters being added at very specific times and temperatures. After pressing, the rind is washed regularly for the first two months, giving it a pungency which on cutting gives way to sweet, clean, milky notes typical of the organic milk. The overall result is a sweet nuttiness and an unusual combination of rich earthy notes. The Mount Shadwell cheese fits somewhere between Gruyere and Raclette but has a flavour and texture characteristics all of its own.
