Pasta Emilia's interpretation of this infamous Ligurian sauce includes a small Australian twist: they use macadamia rather than pine nuts. They also use a local parmesan cheese, parmigiano australianoiano. This organic ‘grana’ texture cheese produced from Victorian biodynamic milk has a clean, sweet, lingering flavour that has become an integral part of their production. Cheese maker Steve Interlandia learnt how to make traditional parmesan from his father John who was plying his craft as far back as 1958.
