Offaly Good searched high and low for an organic mushroom supplier, and they finally found them. They were worth the wait. Grown in NSW, you won’t find a tastier product. These guys pride themselves on growing exotic varieties, focussing on nutrition as much as flavour. They use the traditional log growing process, rather than soil and manure, which has been used by the Japanese for hundreds of years. It’s a very involved process, which includes harvesting the logs, drying the bark, waxing and soaking them, among other stages. The shitake’s love it.
