The loin fillet is one of the smallest and least used muscles on the pig, therefore it is super tender and delicate. We recommend either searing the fillet and oven baking, or cutting into diagonal steaks for a quick pan fry. Delicious pan fried with mustard, mushrooms and white wine or verjus and a dollop of pure cream. Best cooked medium rare.
