A lamb ragu with a depth of flavour and hints of cinnamon, thyme and fennel. 1888 Certified lamb shoulders are cooked for 8 hours in a rich tomato based sauce before being shredded to produce a ragu without comparison.Serve with papparedelle or your preferred pasta. Try serving with a spoonful of whipped ricotta and some rosemary pangrattato on top, or if you are not feeling like any extra work just shave some aged parmesan after plateing.
